Ingredients

  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • Optional: 1/2 cup spinach leaves
  • Optional: 1 small red onion, finely chopped
  • Optional: 1/4 cup olives, sliced
  • Optional: 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Spread the crumbled feta cheese evenly across the bottom of the dish.
  4. Add the halved cherry tomatoes on top of the feta.
  5. If using, add spinach, red onion, or olives evenly over the tomatoes and feta.
  6. Drizzle the olive oil over the mixture.
  7. Season with salt, pepper, and oregano.
  8. Crack the eggs over the top, spacing them evenly.
  9. Bake for 15-20 minutes until egg whites are set and yolks reach desired doneness.
  10. Remove from oven and let cool slightly.
  11. Garnish with fresh basil if desired and serve warm with crusty bread or toast.
