- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, cut into wedges
- 2 zucchinis, sliced
- Optional: 1 cup cherry tomatoes, halved
- Optional: 1/2 cup feta cheese, crumbled
- Optional: Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the balsamic vinegar, olive oil, honey, thyme, garlic powder, salt, and pepper.
- Place the chicken breasts in a shallow dish and pour half of the balsamic mixture over them. Marinate for at least 15 minutes.
- In a large bowl, toss the broccoli, bell peppers, onion, and zucchinis with a drizzle of olive oil, salt, and pepper.
- Arrange the marinated chicken and vegetables on a large baking sheet in a single layer.
- Roast in the preheated oven for 25–30 minutes, or until the chicken is cooked through and the vegetables are tender.
- In the last 5 minutes of cooking, brush the chicken with the remaining balsamic glaze.
- If using cherry tomatoes and feta, add them to the baking sheet in the last 10 minutes of roasting.
- Remove from the oven and let the dish rest for 5 minutes before serving.
Notes
Marinate the chicken longer for deeper flavor. Cut vegetables uniformly to ensure even roasting. Use a thermometer to confirm chicken reaches 165°F (75°C).
