- 2 ripe bananas, mashed
- 2 cups rolled oats
- 2 cups almond milk (or any milk of your choice)
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 tablespoons maple syrup or honey
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/4 cup chocolate chips
- Optional: 1/4 cup dried cranberries or raisins
- Optional: 1 tablespoon chia seeds or flaxseeds
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish or ramekins.
- Mash the bananas in a large mixing bowl until smooth.
- Add oats, almond milk, vanilla extract, cinnamon, maple syrup, baking powder, and salt. Stir to combine.
- Pour mixture into the prepared dish or ramekins.
- Sprinkle optional add-ins on top and gently mix in.
- Bake for 30–35 minutes or until set and golden brown.
- Let cool for a few minutes before serving.
- Serve warm with maple syrup or yogurt if desired.
Notes
Use very ripe bananas for the best flavor and texture. Avoid quick oats to maintain a chewy consistency. Watch baking time to prevent dryness.
