- 1 cup ripe bananas (about 2 large bananas, mashed)
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/4 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- Optional: 1/2 cup chocolate chips
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/4 cup raisins or dried cranberries
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas until smooth. Add the softened butter and brown sugar, and mix until well combined.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined. Do not overmix.
- If using, fold in your choice of optional add-ins such as chocolate chips or nuts.
- Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the centers are set.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use ripe bananas for maximum sweetness. Chill dough for 30 minutes before baking for thicker cookies. Avoid overmixing to keep cookies soft.
