  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, softened

  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Optional: 1/2 cup chocolate chips
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/4 cup raisins or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Add the softened butter and brown sugar, and mix until well combined.
  3. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Do not overmix.
  6. If using, fold in your choice of optional add-ins such as chocolate chips or nuts.
  7. Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the centers are set.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use ripe bananas for maximum sweetness. Chill dough for 30 minutes before baking for thicker cookies. Avoid overmixing to keep cookies soft.
