  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce (homemade or store-bought)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • Optional: Chopped jalapeños, shredded cheese, pineapple chunks

Instructions

  1. Rinse jasmine rice under cold water until water runs clear.
  2. In a saucepan, combine rice with 4 cups of water. Bring to boil, cover, reduce heat, and simmer for 15 minutes or until cooked.
  3. Pat chicken dry and season with smoked paprika, salt, and pepper.
  4. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–6 minutes on each side or until internal temp reaches 165°F (75°C).
  5. Remove chicken and let rest before slicing.
  6. Return sliced chicken to skillet with BBQ sauce. Toss to coat evenly.
  7. In a separate pan, heat sweet corn and black beans until warm.
  8. Assemble bowls: divide rice among 4 bowls, then top with BBQ chicken, corn, beans, diced red bell pepper, and avocado.
  9. Garnish with cilantro and serve with lime wedges. Enjoy!

Notes

For a deeper flavor, marinate the chicken in BBQ sauce ahead of time. Avoid overcooking the chicken by using a meat thermometer. Adjust seasoning in rice for best balance.
