- 2 cups uncooked jasmine rice
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce (homemade or store-bought)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup sweet corn (fresh or frozen)
- 1 cup black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, sliced
- Fresh cilantro for garnish
- Lime wedges for serving
- Optional: Chopped jalapeños, shredded cheese, pineapple chunks
Instructions
- Rinse jasmine rice under cold water until water runs clear.
- In a saucepan, combine rice with 4 cups of water. Bring to boil, cover, reduce heat, and simmer for 15 minutes or until cooked.
- Pat chicken dry and season with smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–6 minutes on each side or until internal temp reaches 165°F (75°C).
- Remove chicken and let rest before slicing.
- Return sliced chicken to skillet with BBQ sauce. Toss to coat evenly.
- In a separate pan, heat sweet corn and black beans until warm.
- Assemble bowls: divide rice among 4 bowls, then top with BBQ chicken, corn, beans, diced red bell pepper, and avocado.
- Garnish with cilantro and serve with lime wedges. Enjoy!
Notes
For a deeper flavor, marinate the chicken in BBQ sauce ahead of time. Avoid overcooking the chicken by using a meat thermometer. Adjust seasoning in rice for best balance.
