  • 1 lb beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 carrots, julienned
  • 4 cups beef broth
  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 4 cloves garlic, whole
  • Optional: 1/2 cup raisins
  • Optional: 1/4 cup slivered almonds
  • Optional: Fresh cilantro or parsley for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Pat beef cubes dry and season with salt and pepper.
  3. Heat vegetable oil in a heavy-bottomed pot over medium-high heat.
  4. Brown the beef cubes on all sides, then remove and set aside.
  5. Add chopped onion to the pot and sauté until translucent.
  6. Add julienned carrots and cook until soft.
  7. Stir in cumin seeds, coriander seeds, and turmeric until fragrant.
  8. Return the beef to the pot and add the rinsed rice, whole garlic cloves, and beef broth.
  9. Bring to a simmer, reduce heat to low, cover tightly, and cook for 25-30 minutes until rice is tender.
  10. Remove from heat and let rest for 10 minutes covered.
  11. Fluff the rice with a fork and garnish with herbs if desired before serving.

Notes

Avoid stirring during cooking to keep the rice grains intact. For deeper flavor, marinate the beef in yogurt and spices ahead of time. Use a heavy-bottomed pot to prevent sticking.
