- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/2 cup graham cracker crumbs
- 2 tablespoons melted butter
- Optional: 1/4 cup chopped nuts (walnuts or pecans)
- Optional: 1/4 teaspoon cinnamon
- Optional: 1 tablespoon chia seeds
Instructions
- Preheat oven to 350°F (175°C). You’ll briefly use it to help set the bites.
- Mix graham cracker crumbs and melted butter in a bowl until combined.
- Press mixture into lined muffin tin cups to form crust. Set aside.
- Blend cottage cheese, Greek yogurt, honey, vanilla, and lemon juice until smooth.
- Transfer to a bowl and fold in blueberries and any optional add-ins gently.
- Make a slurry by mixing cornstarch with a bit of water. Stir into mixture.
- Spoon mixture onto the crusts in the muffin tin, filling each one.
- Bake for 5 minutes, turn off oven, and leave door slightly open. Cool completely.
- Refrigerate for at least 2 hours before serving to set.
Notes
Don’t overmix the blueberries to avoid excess moisture. Use well-blended or sieved cottage cheese for a smooth texture. Crust should be packed tightly to hold shape.
