Ingredients

  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • Optional: 1/4 cup chopped nuts (walnuts or pecans)
  • Optional: 1/4 teaspoon cinnamon
  • Optional: 1 tablespoon chia seeds

Instructions

  1. Preheat oven to 350°F (175°C). You’ll briefly use it to help set the bites.
  2. Mix graham cracker crumbs and melted butter in a bowl until combined.
  3. Press mixture into lined muffin tin cups to form crust. Set aside.
  4. Blend cottage cheese, Greek yogurt, honey, vanilla, and lemon juice until smooth.
  5. Transfer to a bowl and fold in blueberries and any optional add-ins gently.
  6. Make a slurry by mixing cornstarch with a bit of water. Stir into mixture.
  7. Spoon mixture onto the crusts in the muffin tin, filling each one.
  8. Bake for 5 minutes, turn off oven, and leave door slightly open. Cool completely.
  9. Refrigerate for at least 2 hours before serving to set.

Notes

Don’t overmix the blueberries to avoid excess moisture. Use well-blended or sieved cottage cheese for a smooth texture. Crust should be packed tightly to hold shape.
