Description
A delightful and healthy frozen snack featuring creamy Greek yogurt beautifully swirled with antioxidant-rich blueberry sauce. Perfect for any time of day.
Ingredients
Scale
- 2 cups Greek yogurt (plain or vanilla)
- 1 cup fresh blueberries
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Optional: 1 tablespoon chia seeds
- Optional: 1/4 cup granola
- Optional: 1 tablespoon lemon zest
Instructions
- Wash the blueberries thoroughly and pat dry.
- In a small saucepan, combine blueberries and honey (or maple syrup). Cook over medium heat until berries burst and sauce forms, about 5 minutes. Let cool slightly.
- In a mixing bowl, stir together Greek yogurt and vanilla extract until smooth.
- Fold in the blueberry sauce gently to create a swirl effect.
- Line a muffin tin with silicone or paper liners. Spoon the yogurt mixture into each cup, filling about three-quarters full.
- Freeze for about 2 hours or until firm.
- Remove from tin and store in an airtight container in the freezer.
Notes
Use full-fat Greek yogurt for a creamier bite. Avoid over-mixing to keep the swirl effect. Let bites sit a few minutes before serving for best texture.
