Instructions

  1. In a large bowl, whisk together flour, 2 tablespoons sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine buttermilk, egg, melted butter, and vanilla extract. Mix well.
  3. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.
  4. In a separate bowl, beat the cream cheese, sour cream, 1/4 cup sugar, and lemon juice until smooth and creamy.
  5. Preheat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  6. Scoop about 1/4 cup of pancake batter onto the skillet and spread slightly to form a circle.
  7. Add a dollop of the cream cheese mixture to the center of the pancake.
  8. When bubbles appear on the surface and the edges are set, flip the pancake and cook until golden brown.
  9. Repeat with remaining batter and filling.
