- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: 1/2 teaspoon red pepper flakes
- Optional: 1/2 cup cooked and crumbled Italian sausage
- Optional: Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté for about 5 minutes until translucent.
- Add minced garlic and cook for 1-2 minutes until fragrant.
- Pour in chicken broth and diced tomatoes. Bring to a simmer.
- Add cheese tortellini and cook according to package instructions (7-9 minutes).
- Reduce heat to low, then stir in heavy cream, spinach, mozzarella, and Parmesan cheese.
- Stir gently until cheese melts and soup is creamy.
- Season with salt, pepper, and red pepper flakes if using.
- Serve hot, garnished with fresh basil if desired.
Notes
Avoid overcooking the tortellini to maintain texture. Use freshly grated Parmesan for best flavor. Let soup cool before storing. Can be frozen, but tortellini texture may change.
