- 1 pound chicken breast, diced
- 4 cups chicken broth
- 1 cup dill pickles, chopped
- 1 cup pickle juice
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons fresh dill, chopped
- Optional: 1/2 cup sour cream
- Optional: 1/2 teaspoon red pepper flakes
- Optional: 1/2 cup celery, diced
- Optional: 1 tablespoon lemon juice
Instructions
- Dice the chicken breast, chop dill pickles, and dice carrots, potatoes, and onion.
- In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until translucent.
- Add diced chicken and cook until browned on all sides.
- Pour in the chicken broth and bring to a simmer.
- Add chopped pickles and pickle juice, stir to combine.
- Add carrots and potatoes. Simmer for about 20 minutes, or until vegetables are tender.
- Season with salt and pepper to taste. Stir in fresh dill just before serving.
- If desired, add sour cream, lemon juice, celery, or red pepper flakes for extra flavor.
Notes
Avoid overcooking the chicken during browning to keep it tender. Add pickles midway to maintain their crunch. Homemade broth enhances flavor.
