Soft, fluffy steamed buns filled with sweet and savory BBQ pork – a dim sum favorite made from scratch at home.
Ingredients

- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup warm water
- 1 teaspoon active dry yeast
- 1 tablespoon vegetable oil
- 1/2 pound char siu pork, diced
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1/4 cup chicken stock
- 1 teaspoon sesame oil
- 1/2 teaspoon five-spice powder
- 2 green onions, chopped
- Optional: 1 teaspoon minced ginger
- Optional: 1 tablespoon honey
- Optional: 1/2 teaspoon chili paste
Instructions
- In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
- Add flour, salt, and vegetable oil. Knead for 10 minutes until smooth. Cover and let rise 1–2 hours until doubled.
- In a saucepan, combine char siu pork, hoisin sauce, soy sauce, oyster sauce, cornstarch, chicken stock, sesame oil, five-spice powder, and green onions. Cook until thickened. Let cool.
- Punch down dough and divide into 12 pieces. Roll into balls, flatten into disks, and fill with 1 tbsp pork mixture. Pleat edges to seal.
- Place buns on parchment squares. Let rise 20 minutes.
- Steam over boiling water for 15 minutes with lid slightly ajar to avoid sogginess.
Notes
Ensure filling is cool before stuffing buns. Do not oversteam or overfill to maintain fluffy texture.
