Ingredients

  • 500g boneless, skinless chicken breast, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon baking powder
  • 1 cup cold water
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Optional: Chopped green onions, chili flakes, 1 tablespoon hoisin sauce, sliced almonds

Instructions

  1. Finely chop the chicken breast and place in a mixing bowl.
  2. Add soy sauce, grated ginger, minced garlic, sesame oil, salt, and pepper. Mix well and marinate for at least 30 minutes.
  3. In a separate bowl, combine flour, cornstarch, and baking powder. Gradually add cold water, whisking into a smooth batter.
  4. Heat vegetable oil in a deep pan or wok to 350°F (175°C).
  5. Shape marinated chicken into small balls.
  6. Dip each ball in batter until fully coated.
  7. Fry the balls in batches for 5–6 minutes until golden and cooked through.
  8. Remove and drain on paper towels. Garnish as desired and serve immediately.

Notes

Ensure oil is at the right temperature before frying to prevent sogginess. Cold water in the batter ensures a light, crispy finish.
