- 500g boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1/2 cup unsalted roasted peanuts
- 1/4 cup creamy peanut butter
- 1/4 cup chicken broth
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 red bell pepper, sliced
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: 1 tablespoon sesame oil
- Optional: 1 tablespoon chili paste
- Optional: 1 cup snap peas or broccoli
- Optional: Fresh cilantro for garnish
Instructions
- In a medium bowl, combine chicken with soy sauce and cornstarch. Mix well and marinate for at least 15 minutes.
- In a small bowl, whisk together peanut butter, chicken broth, hoisin sauce, rice vinegar, honey, garlic, and ginger. Season with salt and pepper.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
- In the same skillet, stir-fry bell pepper and optional vegetables for 3–4 minutes until tender-crisp.
- Return chicken to the skillet. Pour in peanut sauce and stir to coat evenly.
- Simmer on medium-low heat for 2–3 minutes until sauce thickens.
- Top with roasted peanuts and chopped green onions before serving.

Cut chicken evenly for consistent cooking. Avoid overcrowding the pan. Taste sauce before combining. Garnish with cilantro and serve hot.
