- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cups vegetable broth
- 1 pound salmon fillets, skin removed and cubed
- 1 cup potatoes, diced
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- 2 tablespoons fresh dill, chopped
- Juice of 1 lemon
- Optional: 1 cup corn kernels (fresh or frozen)
- Optional: 1 teaspoon smoked paprika
- Optional: 1 tablespoon capers
- Optional: Fresh parsley for garnish
Instructions
- Chop the onion, garlic, carrots, celery, and potatoes. Cube the salmon and measure remaining ingredients.
- Heat olive oil in a large pot over medium heat.
- Sauté onion for 3–4 minutes until translucent. Add garlic, carrots, and celery. Cook 5 minutes.
- Pour in vegetable broth and bring to a simmer. Add potatoes and cook for 10–12 minutes until tender.
- Add cubed salmon, stirring gently. Cook 5–7 minutes until salmon flakes easily.
- Stir in cream or coconut milk. Season with salt, pepper, and lemon juice. Simmer for 5 minutes.
- Remove from heat and stir in fresh dill. Adjust seasoning to taste.
Notes
Use fresh salmon and herbs for best flavor. Avoid overcooking the salmon. A bit of lemon juice goes a long way.
