- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegan feta cheese, crumbled
- 1 tablespoon fresh parsley, chopped
- Optional: 1 teaspoon smoked paprika
- Optional: 1 tablespoon nutritional yeast
- Optional: 1 teaspoon chili flakes
- Optional: 1 tablespoon lemon juice
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the russet potatoes. Cut them into evenly-sized fries, about 1/4-inch thick.
- In a large bowl, toss the potato fries with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Spread the coated fries in a single layer on the prepared baking sheet. Ensure they are not overcrowded for optimal crispiness.
- Bake in the preheated oven for 25–30 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove the fries from the oven and immediately sprinkle the crumbled vegan feta cheese over them.
- Garnish with chopped fresh parsley and any additional optional add-ins of your choice.
- Serve hot and enjoy your delightful vegan fries with feta!
Notes
For crispier fries, soak the cut potatoes in cold water for 30 minutes and dry thoroughly before baking. Don’t overcrowd the pan to avoid steaming instead of roasting.
