- 150g dried fish maw
- 200g chicken breast, sliced
- 100g dried scallops
- 1 liter chicken broth
- 2 cloves garlic, minced
- 1-inch ginger, sliced
- 50g goji berries
- 2 tablespoons soy sauce
- Salt and pepper to taste
- 2 spring onions, chopped
- 1 tablespoon sesame oil
- Optional: 50g shiitake mushrooms, sliced
- Optional: 1 tablespoon Chinese cooking wine
- Optional: Fresh cilantro for garnish
Instructions
- Soak the dried fish maw in cold water overnight to rehydrate. Drain and cut into bite-sized pieces.
- Soak the dried scallops in warm water for 30 minutes. Drain and set aside.
- Prepare chicken broth by simmering chicken bones in 1 liter of water for 1 hour, then strain.
- Heat sesame oil in a large pot over medium heat. Add minced garlic and sliced ginger, sauté until fragrant.
- Add sliced chicken breast and cook until white.
- Pour in chicken broth and bring to a gentle boil.
- Add rehydrated fish maw, dried scallops, and goji berries. Simmer for 30 minutes.
- Season with soy sauce, salt, and pepper to taste.
- If using, stir in Chinese cooking wine and sliced shiitake mushrooms. Simmer 10 more minutes.
- Garnish with chopped spring onions and fresh cilantro before serving.
Notes
Avoid boiling the soup rapidly to maintain the delicate texture of the fish maw. Taste before adding salt as dried scallops and fish maw contribute natural umami.
