- 1 tablespoon of red wine vinegar
- 1 red onion, cut into chunks (optional)

Instructions
- In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and red wine vinegar. Mix well to create the marinade.
- Add the cubed lamb to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill to medium-high heat or your oven to 400°F (200°C).
- Thread marinated lamb cubes onto skewers, alternating with red onion and bell pepper pieces if desired.
- Grill each side for 4-5 minutes until desired doneness, or bake for 20-25 minutes, turning halfway through.
- Remove skewers from heat, let rest briefly, then garnish with fresh parsley and serve warm.
