A creamy, refreshing pudding made with fresh strawberries and chia seeds perfect for breakfast, snack, or a healthy dessert.

- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup chia seeds
- 2 cups almond milk (or milk of choice)
- 2 tablespoons maple syrup (optional, adjust to taste)
- 1 teaspoon vanilla extract
- Optional: 1 tablespoon shredded coconut
- Optional: 1/4 cup chopped nuts (almonds, walnuts, or pecans)
- Optional: 1 tablespoon cacao nibs or chocolate chips
- Fresh mint leaves for garnish
Instructions
- Blend the fresh strawberries in a blender until smooth. Leave some small chunks if you prefer a textured pudding.
- In a large bowl, mix the blended strawberries, chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to combine.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens to a pudding-like consistency.
- Once set, stir the pudding well. Add more almond milk if the consistency is too thick.
- Serve in bowls or glasses. Top with shredded coconut, chopped nuts, cacao nibs, or fresh mint leaves as desired.
Notes
For a smoother texture, blend the chia seeds with the rest of the ingredients. Always allow enough chill time for the chia to fully expand — ideally overnight.
