  • 1/2 cup chia seeds
  • 2 cups almond milk (or milk of choice)
  • 2 tablespoons maple syrup (optional, adjust to taste)
  • 1 teaspoon vanilla extract
  • Optional: 1 tablespoon shredded coconut
  • Optional: 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • Optional: 1 tablespoon cacao nibs or chocolate chips
  • Fresh mint leaves for garnish

Instructions

  1. Blend the fresh strawberries in a blender until smooth. Leave some small chunks if you prefer a textured pudding.
  2. In a large bowl, mix the blended strawberries, chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to combine.
  3. Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens to a pudding-like consistency.
  4. Once set, stir the pudding well. Add more almond milk if the consistency is too thick.
  5. Serve in bowls or glasses. Top with shredded coconut, chopped nuts, cacao nibs, or fresh mint leaves as desired.

Notes

For a smoother texture, blend the chia seeds with the rest of the ingredients. Always allow enough chill time for the chia to fully expand — ideally overnight.
