- 1.5 pounds of chicken breast, cut into 1-inch cubes
- 1/2 cup soy sauce
- 1/4 cup sesame oil
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 2 tablespoons rice vinegar
- 1 tablespoon gochujang (Korean chili paste)
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- Bamboo or metal skewers
- 1 tablespoon toasted sesame seeds (optional)
- 2 green onions, sliced (optional)
- Fresh lime juice (optional)
Instructions
- Soak bamboo skewers in water for 30 minutes if using.
- In a bowl, whisk together soy sauce, sesame oil, honey, garlic, ginger, rice vinegar, and gochujang.
- Add chicken cubes to the marinade, coat well, cover and refrigerate for at least 1 hour (or overnight).
- Preheat grill to medium-high heat.
- Thread marinated chicken, bell peppers, and onions onto skewers.
- Grill for 10-12 minutes, turning occasionally until chicken is cooked and lightly charred.
- Remove from grill and let rest a few minutes.
- Garnish with sesame seeds, green onions, and a squeeze of lime if desired.
Notes
For maximum flavor, marinate overnight. Don’t overcrowd the skewers to ensure even cooking. Avoid overcooking to keep chicken juicy.
