  • 1.5 pounds of chicken breast, cut into 1-inch cubes
  • 1/2 cup soy sauce
  • 1/4 cup sesame oil
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons rice vinegar
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • Bamboo or metal skewers
  • 1 tablespoon toasted sesame seeds (optional)
  • 2 green onions, sliced (optional)
  • Fresh lime juice (optional)

Instructions

  1. Soak bamboo skewers in water for 30 minutes if using.
  2. In a bowl, whisk together soy sauce, sesame oil, honey, garlic, ginger, rice vinegar, and gochujang.
  3. Add chicken cubes to the marinade, coat well, cover and refrigerate for at least 1 hour (or overnight).
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken, bell peppers, and onions onto skewers.
  6. Grill for 10-12 minutes, turning occasionally until chicken is cooked and lightly charred.
  7. Remove from grill and let rest a few minutes.
  8. Garnish with sesame seeds, green onions, and a squeeze of lime if desired.

Notes

For maximum flavor, marinate overnight. Don’t overcrowd the skewers to ensure even cooking. Avoid overcooking to keep chicken juicy.
