- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons sesame oil
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon sesame seeds
- 2 scallions, chopped
- Optional: 1 tablespoon honey for extra sweetness
- Optional: 1 teaspoon crushed red pepper for additional heat
- Optional: 1/4 cup chopped cilantro for garnish
Instructions
- In a large bowl, combine soy sauce, brown sugar, sesame oil, gochujang, rice vinegar, garlic, and ginger. Mix thoroughly until the sugar dissolves.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
- Preheat your grill or oven to 375°F (190°C).
- For grilling: oil the grill grates and grill the chicken thighs skin-side down for 5–7 minutes per side.
- For baking: place chicken thighs in a parchment-lined baking dish and bake for 25–30 minutes, or until internal temperature reaches 165°F (75°C).
- Let rest a few minutes before serving. Garnish with sesame seeds and chopped scallions.
Notes
Marinate for at least 2 hours for best flavor. Avoid overcooking. Always let the meat rest before serving for maximum juiciness.
