Ingredients

  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sugar
  • 1-inch piece of ginger, sliced
  • Salt and pepper to taste
  • Optional: 2 cups of assorted mushrooms (shiitake, enoki, etc.)
  • Optional: 1 cup of tofu, cubed
  • Optional: 1 cup of napa cabbage, chopped
  • Optional: 1 cup of spinach
  • Optional: 1 cup of sliced beef or pork
  • Optional: 1 cup of seafood (shrimp, clams, etc.)
  • Optional: 2 green onions, chopped
  • Optional: Fresh cilantro for garnish

Instructions

  1. In a large pot, combine the water and beef or chicken stock. Bring to a gentle simmer over medium heat.
  2. Add gochujang and doenjang, stirring until dissolved.
  3. Add sliced onion, garlic, ginger, soy sauce, and sugar. Stir well.
  4. Season with salt and pepper. Simmer for 20 minutes.
  5. Add optional ingredients like mushrooms, tofu, and vegetables.
  6. Add meat or seafood and cook just until done.
  7. Adjust seasoning as needed. Simmer for another 10 minutes.
  8. Garnish with green onions and cilantro.
  9. Serve at the table with a portable burner for a traditional hot pot experience.

Notes

Use rice wine vinegar or sesame oil for added depth. Taste and balance broth as it cooks. Avoid overcooking ingredients to preserve their texture and flavor.
