Ingredients

  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup sesame oil
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 Asian pear, grated (or 1 apple)
  • 1/4 cup rice wine vinegar
  • 1 teaspoon black pepper
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds
  • Optional: 1 tablespoon gochujang (Korean chili paste)
  • Optional: 1/4 cup honey
  • Optional: 1 tablespoon fish sauce

Instructions

  1. In a large bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, grated pear, rice wine vinegar, and black pepper until the sugar dissolves.
  2. Place short ribs in a large ziplock bag or shallow dish and pour the marinade over the ribs. Seal and refrigerate for at least 4 hours or overnight.
  3. For the grill: Preheat grill to medium-high. Remove ribs from marinade and grill for 5–7 minutes per side until nicely charred.
  4. For the oven: Preheat oven to 325°F (163°C). Sear ribs in a pot with oil until browned. Add marinade, cover, and braise in the oven for 2–3 hours.
  5. Sprinkle with green onions and sesame seeds before serving.

Notes

Marinate overnight for best flavor. Add a charcoal piece during grilling for smoky depth. Avoid overcooking to keep the meat tender.
