Description
Tender, flavorful Korean short ribs marinated in a rich blend of soy, garlic, sesame oil, and pear, then grilled or braised to perfection.
Ingredients

- 3 pounds of beef short ribs (flanken cut)
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup sesame oil
- 5 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 Asian pear, grated (or 1 apple)
- 1/4 cup rice wine vinegar
- 1 teaspoon black pepper
- 2 green onions, chopped
- 2 tablespoons sesame seeds
- Optional: 1 tablespoon gochujang (Korean chili paste)
- Optional: 1/4 cup honey
- Optional: 1 tablespoon fish sauce
Instructions
- In a large bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, grated pear, rice wine vinegar, and black pepper until the sugar dissolves.
- Place short ribs in a large ziplock bag or shallow dish and pour the marinade over the ribs. Seal and refrigerate for at least 4 hours or overnight.
- For the grill: Preheat grill to medium-high. Remove ribs from marinade and grill for 5–7 minutes per side until nicely charred.
- For the oven: Preheat oven to 325°F (163°C). Sear ribs in a pot with oil until browned. Add marinade, cover, and braise in the oven for 2–3 hours.
- Sprinkle with green onions and sesame seeds before serving.
Notes
Marinate overnight for best flavor. Add a charcoal piece during grilling for smoky depth. Avoid overcooking to keep the meat tender.
