A crispy and golden Middle Eastern pastry filled with a rich, creamy cheese blend – perfect for appetizers or party snacks.

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup warm milk
- 1 tsp salt
- 200g feta cheese, crumbled
- 100g akkawi cheese, shredded
- 1 tbsp dried mint
- 1 egg, beaten (for egg wash)
- Vegetable oil, for frying
- 1 tbsp sesame seeds (optional, for topping)
- 1/2 tsp black cumin seeds (optional, for flavor)
- Chopped fresh parsley (for garnish)
Instructions
- In a large mixing bowl, combine flour and salt. Add softened butter and mix until crumbly.
- Gradually add warm milk, kneading into a smooth dough. Cover and rest for 30 minutes.
- In another bowl, mix feta, akkawi, and dried mint to create the filling.
- Roll out dough to 1/8 inch thickness and cut into 3-inch circles.
- Place a teaspoon of filling in each, fold into a semi-circle, and seal edges with a fork.
- Heat vegetable oil in a deep pan. Fry sambousek in batches for 3–4 minutes until golden.
- Drain on paper towels. Brush with egg wash and sprinkle sesame or black cumin seeds.
- Serve warm, garnished with parsley.
Notes
Make sure the dough is elastic and oil is hot to avoid greasy sambousek. Don’t overfill to prevent bursting during frying.
