  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup warm milk
  • 1 tsp salt
  • 200g feta cheese, crumbled
  • 100g akkawi cheese, shredded
  • 1 tbsp dried mint
  • 1 egg, beaten (for egg wash)
  • Vegetable oil, for frying
  • 1 tbsp sesame seeds (optional, for topping)
  • 1/2 tsp black cumin seeds (optional, for flavor)
  • Chopped fresh parsley (for garnish)

Instructions

  1. In a large mixing bowl, combine flour and salt. Add softened butter and mix until crumbly.
  2. Gradually add warm milk, kneading into a smooth dough. Cover and rest for 30 minutes.
  3. In another bowl, mix feta, akkawi, and dried mint to create the filling.
  4. Roll out dough to 1/8 inch thickness and cut into 3-inch circles.
  5. Place a teaspoon of filling in each, fold into a semi-circle, and seal edges with a fork.
  6. Heat vegetable oil in a deep pan. Fry sambousek in batches for 3–4 minutes until golden.
  7. Drain on paper towels. Brush with egg wash and sprinkle sesame or black cumin seeds.
  8. Serve warm, garnished with parsley.

Notes

Make sure the dough is elastic and oil is hot to avoid greasy sambousek. Don’t overfill to prevent bursting during frying.
