- 3 cups all-purpose flour
- 1 cup warm water (110°F)
- 2 teaspoons active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons olive oil
- Optional: 1 tablespoon dried oregano
- Optional: 1 tablespoon sesame seeds
Instructions
- In a small bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until frothy.
- In a large bowl, mix flour and salt. Add yeast mixture and olive oil. Stir until a dough forms.
- Knead on a floured surface for 8-10 minutes until smooth and elastic.
- Place dough in an oiled bowl, cover with a damp cloth, and let rise for 1 hour or until doubled in size.
- Preheat oven to 475°F (245°C) with a baking stone or inverted sheet inside.
- Punch down dough and divide into 8 pieces. Shape into balls and rest under a damp towel for 10 minutes.
- Roll each ball into a 1/4-inch thick circle on a floured surface.
- Place 2-3 pitas on the hot stone or sheet and bake for 3-5 minutes until puffed and lightly browned. Cover with a clean towel to keep soft.
Notes
Ensure your oven is fully preheated for proper puffing. Roll evenly and avoid making dough too thin. For added flavor, brush baked pitas with olive oil and garlic.
