Ingredients

  • 1 medium-sized red cabbage, finely shredded
  • 1 cup of fresh parsley, chopped
  • 1/4 cup of lemon juice
  • 1/4 cup of extra virgin olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: 1/2 cup of sliced almonds or pine nuts
  • Optional: 1/2 cup of crumbled feta cheese
  • Optional: 1/4 cup of diced red onion
  • Optional: 1/4 teaspoon of sumac

Instructions

  1. Wash and remove outer leaves of the red cabbage, then finely shred it using a knife or mandolin and place in a large mixing bowl.
  2. Chop the fresh parsley and add it to the bowl with the cabbage.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the cabbage and parsley, then toss thoroughly to coat evenly.
  5. If desired, fold in optional ingredients such as almonds, feta, red onion, or sumac.
  6. Let the slaw rest for 15–20 minutes before serving to enhance the flavor.

Notes

For best results, finely shred the cabbage and let the slaw rest before serving. Avoid over-dressing, and feel free to add mint or sumac for extra freshness.
