A vibrant and zesty Lebanese Red Cabbage Slaw that’s as refreshing as it is beautiful, packed with flavor and perfect for any occasion.
Ingredients

- 1 medium-sized red cabbage, finely shredded
- 1 cup of fresh parsley, chopped
- 1/4 cup of lemon juice
- 1/4 cup of extra virgin olive oil
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Optional: 1/2 cup of sliced almonds or pine nuts
- Optional: 1/2 cup of crumbled feta cheese
- Optional: 1/4 cup of diced red onion
- Optional: 1/4 teaspoon of sumac
Instructions
- Wash and remove outer leaves of the red cabbage, then finely shred it using a knife or mandolin and place in a large mixing bowl.
- Chop the fresh parsley and add it to the bowl with the cabbage.
- In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper to create the dressing.
- Pour the dressing over the cabbage and parsley, then toss thoroughly to coat evenly.
- If desired, fold in optional ingredients such as almonds, feta, red onion, or sumac.
- Let the slaw rest for 15–20 minutes before serving to enhance the flavor.
Notes
For best results, finely shred the cabbage and let the slaw rest before serving. Avoid over-dressing, and feel free to add mint or sumac for extra freshness.
