Ingredients

  • 2 cups long-grain basmati rice
  • 3 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth or water
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: 1/4 cup toasted pine nuts
  • Optional: 1/4 cup chopped fresh parsley or cilantro
  • Optional: 1/2 cup cooked chickpeas
  • Optional: 1/4 cup raisins or currants

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Drain the rice and set aside to let any excess water evaporate.
  3. In a large saucepan, heat olive oil over medium heat.
  4. Add chopped onion and sauté until translucent, about 3–4 minutes.
  5. Add minced garlic and cook for 1 more minute until fragrant.
  6. Stir in turmeric and cumin, cooking for 30 seconds to release flavors.
  7. Add rinsed rice and stir to coat with the oil and spices.
  8. Pour in vegetable broth or water, season with salt and pepper.
  9. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes, or until liquid is absorbed and rice is cooked.
  10. Remove from heat and let sit, covered, for 5 minutes.
  11. Fluff with a fork and stir in any desired optional add-ins.

Notes

Be sure to rinse the rice thoroughly for fluffy grains. Letting the rice rest after cooking enhances both texture and flavor.
