Description

A hearty Moroccan lamb curry enriched with warm spices and creamy yogurt, perfect for an exotic and comforting dinner.


Ingredients

  • 1 kg lamb shoulder, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 400g can of diced tomatoes
  • 500 ml lamb or chicken stock
  • Salt and pepper to taste
  • 200g Greek yogurt
  • Fresh cilantro, for garnish
  • Optional: 1 cup chickpeas, cooked
  • Optional: 1/2 cup raisins or sultanas
  • Optional: 1/2 cup almonds, toasted
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Prepare ingredients: cube lamb, chop onion, mince garlic, grate ginger, and measure spices.
  2. In a large bowl, mix lamb with salt, pepper, and half the spices. Marinate while prepping the rest.
  3. Heat olive oil in a pot over medium-high heat. Sear lamb in batches until browned. Remove and set aside.
  4. In the same pot, sauté onion until soft. Add garlic and ginger; cook until fragrant.
  5. Add remaining spices and cook for 2 minutes to release aromas.
  6. Stir in diced tomatoes, scraping up browned bits from the pot. Return lamb and pour in stock.
  7. Simmer on low heat for 1.5 to 2 hours, until lamb is tender.
  8. Remove from heat and stir in Greek yogurt for a creamy finish.
  9. Garnish with fresh cilantro and optional add-ins before serving.

Notes

Toast spices in a dry pan first for deeper flavor. Use bone-in lamb for richer taste. Avoid curdling by adding yogurt off heat.
