A comforting yet exotic twist on a classic, Moroccan Shepherds Pie blends warm spices, ground lamb, and sweet potatoes for a globally inspired meal.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground lamb
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup beef stock
- 1 cup diced tomatoes
- 1/2 cup dried apricots, chopped
- Salt and pepper to taste
- 2 pounds sweet potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- Optional: 1/4 cup chopped fresh cilantro
- Optional: 1/4 cup slivered almonds, toasted
- Optional: 1/2 cup peas
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and cube the sweet potatoes, then place them in a pot of salted boiling water. Cook until tender, about 15-20 minutes.
- While the sweet potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the ground lamb to the skillet, cooking until browned. Drain excess fat if necessary.
- Stir in the cumin, cinnamon, coriander, and paprika. Cook for another 2 minutes.
- Add the chickpeas, beef stock, diced tomatoes, and apricots. Season with salt and pepper. Simmer for 10 minutes.
- Drain and mash sweet potatoes with milk and butter. Season to taste.
- Transfer the lamb mixture to a baking dish and top with mashed sweet potatoes. Smooth the surface.
- Bake in the oven for 25-30 minutes or until the top is golden.
- Garnish with cilantro and almonds if desired. Serve hot.
Notes
Roast spices before use to deepen flavor. Don’t overcook the lamb. Season sweet potato mash adequately for best taste.
