A comforting yet exotic twist on a classic, Moroccan Shepherds Pie blends warm spices, ground lamb, and sweet potatoes for a globally inspired meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground lamb
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 cup beef stock
  • 1 cup diced tomatoes
  • 1/2 cup dried apricots, chopped
  • Salt and pepper to taste
  • 2 pounds sweet potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • Optional: 1/4 cup chopped fresh cilantro
  • Optional: 1/4 cup slivered almonds, toasted
  • Optional: 1/2 cup peas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and cube the sweet potatoes, then place them in a pot of salted boiling water. Cook until tender, about 15-20 minutes.
  3. While the sweet potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté until translucent.
  4. Add the ground lamb to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in the cumin, cinnamon, coriander, and paprika. Cook for another 2 minutes.
  6. Add the chickpeas, beef stock, diced tomatoes, and apricots. Season with salt and pepper. Simmer for 10 minutes.
  7. Drain and mash sweet potatoes with milk and butter. Season to taste.
  8. Transfer the lamb mixture to a baking dish and top with mashed sweet potatoes. Smooth the surface.
  9. Bake in the oven for 25-30 minutes or until the top is golden.
  10. Garnish with cilantro and almonds if desired. Serve hot.

Notes

Roast spices before use to deepen flavor. Don’t overcook the lamb. Season sweet potato mash adequately for best taste.
