- 3 ripe bananas, mashed
- 1 cup pitted dates
- 3 large eggs

Instructions
- Preheat oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper.
- Blend pitted dates with a couple tablespoons of water in a food processor until smooth. Set aside.
- Mash bananas in a large mixing bowl until smooth.
- Add eggs, melted coconut oil, and vanilla extract to bananas and whisk to combine.
- In a separate bowl, mix almond flour, baking soda, and salt.
- Gradually stir dry ingredients into the wet mixture, avoiding overmixing.
- Fold in the date paste until fully incorporated.
- Gently fold in any optional add-ins like nuts or chocolate chips.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for natural sweetness and moisture. Avoid overbaking to keep the cake tender. A springform pan can help with easy removal.
