  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

  • Optional: 1 teaspoon cayenne pepper
  • Optional: Fresh cilantro or parsley for garnish
  • Optional: 1 cup chopped kale or spinach

Instructions

  1. Wash the okra thoroughly and slice into small pieces. Set aside.
  2. Chop the onion and bell pepper, and mince the garlic.
  3. If using chicken or shrimp, cook them in a separate pan and set aside.
  4. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  5. Add garlic and diced bell pepper. Sauté for 2 more minutes.
  6. Stir in sliced okra and cook for 5–7 minutes until slightly softened.
  7. Pour in broth and diced tomatoes. Stir well.
  8. Add smoked paprika, ground cumin, salt, and pepper. Adjust seasoning to taste.
  9. Simmer soup for 15–20 minutes, stirring occasionally.
  10. If using, add cooked chicken or shrimp and any additional greens. Cook for another 5 minutes.
  11. Remove from heat. Let rest a few minutes before serving. Garnish with fresh herbs.

Notes

To reduce sliminess, avoid overcooking the okra. Roasting the okra first enhances its flavor. Adjust spice levels to your preference.
