- 1 pound fresh okra, sliced
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken or vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Optional: 1 cup cooked chicken or shrimp
- Optional: 1 teaspoon cayenne pepper
- Optional: Fresh cilantro or parsley for garnish
- Optional: 1 cup chopped kale or spinach
Instructions
- Wash the okra thoroughly and slice into small pieces. Set aside.
- Chop the onion and bell pepper, and mince the garlic.
- If using chicken or shrimp, cook them in a separate pan and set aside.
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Add garlic and diced bell pepper. Sauté for 2 more minutes.
- Stir in sliced okra and cook for 5–7 minutes until slightly softened.
- Pour in broth and diced tomatoes. Stir well.
- Add smoked paprika, ground cumin, salt, and pepper. Adjust seasoning to taste.
- Simmer soup for 15–20 minutes, stirring occasionally.
- If using, add cooked chicken or shrimp and any additional greens. Cook for another 5 minutes.
- Remove from heat. Let rest a few minutes before serving. Garnish with fresh herbs.
Notes
To reduce sliminess, avoid overcooking the okra. Roasting the okra first enhances its flavor. Adjust spice levels to your preference.
