Ingredients

  • 1 large green bell pepper, deseeded and chopped
  • 1 large red bell pepper, deseeded and chopped
  • 1 medium yellow onion, peeled and chopped
  • 5 cloves of garlic, peeled
  • 1 bunch of cilantro, stems included
  • 1 bunch of culantro (recao), optional
  • 1/2 cup of olive oil
  • 1 tablespoon of apple cider vinegar
  • Salt and pepper to taste
  • Optional: 1 ají dulce (sweet chili pepper)
  • Optional: 1/2 teaspoon of ground cumin
  • Optional: 1/2 teaspoon of smoked paprika

Instructions

  1. Wash all vegetables thoroughly under cold water.
  2. Chop green and red bell peppers into medium-sized pieces.
  3. Peel and quarter the onion; peel garlic cloves.
  4. In a food processor, combine bell peppers, onion, garlic, cilantro, and culantro if using.
  5. Pulse until finely chopped and well combined.
  6. Slowly add olive oil and apple cider vinegar while pulsing to form a smooth paste.
  7. Season with salt and pepper to taste.
  8. Add optional ingredients if desired for extra flavor.
  9. Transfer to a clean glass jar or airtight container.
  10. Refrigerate for up to one week or freeze in ice cube trays for longer storage.
