- 1 large green bell pepper, deseeded and chopped
- 1 large red bell pepper, deseeded and chopped
- 1 medium yellow onion, peeled and chopped
- 5 cloves of garlic, peeled
- 1 bunch of cilantro, stems included
- 1 bunch of culantro (recao), optional
- 1/2 cup of olive oil
- 1 tablespoon of apple cider vinegar
- Salt and pepper to taste
- Optional: 1 ají dulce (sweet chili pepper)
- Optional: 1/2 teaspoon of ground cumin
- Optional: 1/2 teaspoon of smoked paprika
Instructions
- Wash all vegetables thoroughly under cold water.
- Chop green and red bell peppers into medium-sized pieces.
- Peel and quarter the onion; peel garlic cloves.
- In a food processor, combine bell peppers, onion, garlic, cilantro, and culantro if using.
- Pulse until finely chopped and well combined.
- Slowly add olive oil and apple cider vinegar while pulsing to form a smooth paste.
- Season with salt and pepper to taste.
- Add optional ingredients if desired for extra flavor.
- Transfer to a clean glass jar or airtight container.
- Refrigerate for up to one week or freeze in ice cube trays for longer storage.
Notes
For the best flavor, use fresh herbs and ripe peppers. Avoid over-processing. You can adjust garlic, cilantro, or spices to suit your taste. A splash of lime juice adds brightness!
