- 4 large ripe tomatoes, sliced
- 1 teaspoon salt
- 1/2 cup thinly sliced onion
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3/4 cup mayonnaise
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- Optional: 1/2 teaspoon red pepper flakes
- Optional: 1/4 cup crumbled bacon
- Optional: 1/4 cup grated Parmesan cheese
- Optional: Sliced green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Slice tomatoes and place on paper towels. Sprinkle with salt and let sit for 10 minutes. Pat dry.
- Sauté sliced onions in olive oil until soft and translucent. Set aside.
- In a bowl, combine mozzarella, cheddar, mayonnaise, basil, parsley, and black pepper. Mix until creamy.
- Place the pie crust on a baking sheet. Layer half the tomato slices and onions in the crust.
- Spread half of the cheese mixture over the tomatoes and onions.
- Repeat with remaining tomatoes, onions, and cheese mixture.
- Sprinkle any optional add-ins like bacon or Parmesan on top.
- Bake for 30–40 minutes or until golden brown and bubbling.
- Let cool for at least 10 minutes before slicing and serving.
Notes
Use heirloom tomatoes for extra flavor and color. Ensure tomatoes are well-drained to prevent sogginess. Allow pie to rest before slicing for cleaner cuts.
