  • 200g egg noodles or rice noodles

  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 12 teaspoons chili paste (adjust based on spice preference)
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • Optional: 1/2 cup sliced mushrooms
  • Optional: A handful of baby spinach
  • Optional: 1 carrot, julienned
  • Optional: 1 tablespoon hoisin sauce for a sweeter flavor
  • Optional: A dash of fish sauce for an umami kick

Instructions

  1. Prepare all ingredients: thinly slice chicken, mince garlic, grate ginger, and slice bell pepper and green onions.
  2. Cook noodles according to package instructions. Drain, rinse under cold water, and set aside.
  3. Heat vegetable oil in a large pan or wok over medium-high heat.
  4. Add garlic and ginger, sauté until fragrant (about 1 minute).
  5. Add chicken, cook until browned and cooked through (5-7 minutes). Remove and set aside.
  6. Add bell pepper and snap peas to the same pan, stir-fry until slightly tender but still crisp (3-4 minutes).
  7. Return chicken to the pan. Add cooked noodles, soy sauce, oyster sauce, and chili paste. Toss everything to combine and heat through.
  8. Drizzle with sesame oil, garnish with green onions and sesame seeds. Serve hot.

Notes

Ensure your pan is hot before adding chicken to sear and lock in flavor. Taste and adjust spice as needed. Don’t overcrowd the pan to avoid steaming the chicken.
