A hearty, comforting soup that combines the earthy sweetness of split peas with the savory richness of smoked sausage.

- 1 pound dried split peas, rinsed
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 8 cups chicken broth
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- Optional: 1 cup diced potatoes
- Optional: 1/2 cup chopped fresh parsley
- Optional: 1 tablespoon apple cider vinegar
Instructions
- Rinse the split peas under cold water until the water runs clear.
- Chop the onion, carrots, and celery into uniform pieces.
- Slice the smoked sausage into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, about 5–7 minutes. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened.
- Stir in minced garlic and cook for 1 more minute.
- Add split peas, chicken broth, bay leaf, and thyme. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 to 1.5 hours, stirring occasionally, until peas are tender and soup thickens.
- During the last 15 minutes, return sausage to the pot and stir.
- Season with salt and pepper. Add diced potatoes if using.
- Remove bay leaf before serving. Garnish with parsley if desired.
Notes
For deeper flavor, try adding smoked paprika or cayenne. Allowing the soup to rest overnight enhances the taste.
