  • 1 cup milk
  • 3 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup fresh berries (blueberries, raspberries, or strawberries)
  • Optional: 1 tablespoon lemon zest
  • Optional: 1/4 cup chocolate chips
  • Optional: Honey or maple syrup for drizzling

Instructions

  1. In a medium bowl, whisk together the flour, milk, eggs, melted butter, granulated sugar, and salt until smooth. Cover and let the batter rest for 30 minutes.
  2. In another bowl, mix ricotta cheese, powdered sugar, and vanilla extract until creamy. Set aside.
  3. Heat a non-stick skillet over medium heat and lightly grease with butter.
  4. Pour approximately 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook for 1-2 minutes until golden on the bottom, flip and cook another 30 seconds.
  5. Stack cooked crepes on a plate. Place a spoonful of ricotta mixture in the center of each crepe, fold sides over and then fold ends to form a neat package.
  6. Return filled blintzes to skillet, seam-side down. Cook until golden brown on both sides.

Notes

Let crepe batter rest for best results. Use a non-stick pan to avoid tearing. Do not overfill. Top with fresh berries, honey, or powdered sugar for added flavor.
