- 1 cup all-purpose flour
- 1 cup milk
- 3 large eggs
- 2 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 cup ricotta cheese
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Optional: 1/2 cup fresh berries (blueberries, raspberries, or strawberries)
- Optional: 1 tablespoon lemon zest
- Optional: 1/4 cup chocolate chips
- Optional: Honey or maple syrup for drizzling
Instructions
- In a medium bowl, whisk together the flour, milk, eggs, melted butter, granulated sugar, and salt until smooth. Cover and let the batter rest for 30 minutes.
- In another bowl, mix ricotta cheese, powdered sugar, and vanilla extract until creamy. Set aside.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour approximately 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook for 1-2 minutes until golden on the bottom, flip and cook another 30 seconds.
- Stack cooked crepes on a plate. Place a spoonful of ricotta mixture in the center of each crepe, fold sides over and then fold ends to form a neat package.
- Return filled blintzes to skillet, seam-side down. Cook until golden brown on both sides.
Notes
Let crepe batter rest for best results. Use a non-stick pan to avoid tearing. Do not overfill. Top with fresh berries, honey, or powdered sugar for added flavor.
