- 2 lbs chicken wings, split at the joint, tips removed
- 3 tablespoons Thai red curry paste
- 1 cup coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Optional: 1 teaspoon ground ginger
- Optional: 1 tablespoon soy sauce
- Optional: 1 tablespoon honey
- Optional: 1 red chili, sliced (for extra heat)
Instructions
- In a large bowl, combine Thai red curry paste, coconut milk, fish sauce, brown sugar, lime juice, minced garlic, and vegetable oil. Mix until smooth.
- Add the chicken wings and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
- Remove wings from marinade and arrange on the wire rack. Season with salt and pepper.
- Bake for 25–30 minutes, turning halfway through, until golden brown and crispy.
- While baking, pour remaining marinade into a saucepan and bring to a boil. Reduce heat and simmer for 5–7 minutes until slightly thickened.
- Brush wings with thickened sauce and return to oven for an additional 5 minutes.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
For crispier wings, avoid overcrowding the baking sheet and marinate overnight for deeper flavor. Adjust spice levels by modifying the amount of curry paste or adding red chili slices.
