  • 2 tablespoons vegetable oil

  • 1 tablespoon minced ginger
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1 head of butter or iceberg lettuce
  • 1/4 cup chopped peanuts for garnish
  • 2 tablespoons chopped green onions
  • 12 Thai chilies, sliced (optional for heat)
  • Optional: 1/4 cup bean sprouts
  • Optional: 1/4 cup sliced cucumbers
  • Optional: 1/4 cup chopped mint or basil leaves

Instructions

  1. Wash and dry the lettuce leaves, separating them to form cups.
  2. Chop vegetables, mince garlic and ginger, and slice chilies if using.
  3. Heat vegetable oil in a large skillet over medium heat. Add garlic and ginger, sauté for 1 minute.
  4. Add chopped onion and cook until translucent, about 3-4 minutes.
  5. Increase heat to medium-high. Add ground pork and cook for 5-7 minutes, breaking it up until browned and cooked through.
  6. Add diced red bell pepper and cook for another 2 minutes.
  7. In a small bowl, mix soy sauce, fish sauce, lime juice, and brown sugar. Pour over pork and stir well.
  8. Stir in shredded carrots, cilantro, and half of the green onions. Cook for 2-3 more minutes.
  9. Remove from heat and let cool slightly. Spoon mixture into lettuce cups.
  10. Garnish with chopped peanuts, remaining green onions, and Thai chilies if desired.

Notes

Marinate the pork in the sauce mixture for 30 minutes before cooking for deeper flavor. Use thoroughly dried lettuce leaves to avoid sogginess. Mix butter and iceberg lettuce for the perfect texture balance.
