Instructions

  1. Gather all your ingredients and ensure the turkey is cooked and shredded or diced.
  2. Chop the onion, mince the garlic, and dice the potatoes. If using fresh corn, remove kernels from the cob.
  3. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the diced potatoes and smoked paprika, stirring to coat the potatoes evenly.
  6. Pour in the chicken or turkey broth and bring the mixture to a boil. Reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  7. Add the corn kernels and cooked turkey. Stir to combine and cook for another 5 minutes.
  8. Slowly stir in the heavy cream and season with salt and pepper to taste. Let it simmer for an additional 10 minutes.
  9. Garnish with fresh parsley before serving. Optionally, stir in bell peppers, spinach, cheddar cheese, or chili flakes for added flavor.
