Instructions
- Prepare all ingredients: chop turnip greens, dice onion, mince garlic, and cube the potato.
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic; sauté for 3-4 minutes until translucent and fragrant.
- Stir in cubed potatoes to coat with the onion and garlic mixture.
- Pour in broth and bring to a gentle boil.
- Reduce heat to a simmer, cover, and cook for 10 minutes or until potatoes soften.
- Add chopped turnip greens, salt, black pepper, smoked paprika, and red pepper flakes.
- Simmer for an additional 10-15 minutes until greens are tender.
- Blend partially with an immersion blender for texture (optional).
- Add any optional ingredients like sausage, cream, or Parmesan and stir well.
- Taste and adjust seasoning as needed. Serve hot.
