- 1 pound seitan, thinly sliced
- 1 large onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 4 hoagie rolls or baguettes, sliced lengthwise
- Salt and pepper to taste
- Optional: 1 cup mushrooms, sliced
- Optional: 1 tablespoon nutritional yeast
- Optional: 1/2 cup vegan cheese shreds or slices
- Optional: Hot sauce, to taste
Instructions
- Thinly slice the onions, bell peppers, and seitan. If using, slice the mushrooms.
- In a bowl, mix soy sauce, smoked paprika, garlic powder, salt, and pepper to create a marinade.
- Toss the seitan in the marinade and let it sit for 10 minutes.
- Heat olive oil in a skillet over medium heat. Add onions and cook until caramelized (5–7 minutes).
- Add bell peppers and mushrooms (if using); cook until soft and slightly charred.
- Push veggies aside; add marinated seitan to skillet. Cook until browned and heated through (5–7 minutes).
- If using, sprinkle nutritional yeast and vegan cheese over mixture; allow cheese to melt.
- Toast hoagie rolls or baguettes until golden brown.
- Assemble sandwiches with seitan and vegetable mixture. Add hot sauce if desired.
Notes
Slice seitan thinly for best texture and don’t rush the onion caramelization—it adds essential flavor. Avoid overcrowding the skillet to ensure even browning.
