- 1/2 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 tablespoon espresso powder
- 1 teaspoon vanilla extract
- Pinch of sea salt
- Optional: 1/2 cup chopped almonds
- Optional: 1/4 cup dried cranberries
- Optional: 2 tablespoons chia seeds
Instructions
- Line a 9×9 inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
- In a small bowl, dissolve the espresso powder in 1 tablespoon of warm water.
- In a medium bowl, stir together melted coconut oil and maple syrup until well combined.
- Add cacao powder, dissolved espresso, vanilla extract, and sea salt. Mix until smooth.
- Fold in optional add-ins like chopped almonds, cranberries, or chia seeds if desired.
- Pour mixture into prepared pan and spread evenly with a spatula.
- Refrigerate for at least 2 hours until set and firm.
- Remove from pan using parchment overhang and slice into bars.
Notes
Ensure espresso powder is fully dissolved and coconut oil is smoothly melted for best texture. Avoid adding excess liquid which may prevent proper setting.
