This vegan gelato with coconut sugar is a creamy, naturally sweetened dessert that’s perfect for health-conscious sweet tooths. Made with full-fat coconut milk and coconut sugar, it offers a subtle caramel flavor and indulgent texture all without dairy.

- 2 cans (14 oz each) of full-fat coconut milk
- 3/4 cup coconut sugar
- 1 tablespoon vanilla extract
- 1/4 teaspoon sea salt
- Optional: 1/2 cup chopped dark chocolate (dairy-free)
- Optional: 1/2 cup roasted nuts (almonds, hazelnuts, or pecans)
- Optional: 1/4 cup shredded coconut
Instructions
- Shake the coconut milk cans to combine the cream and liquid.
- In a saucepan, pour in the coconut milk and add the coconut sugar.
- Heat over medium, stirring occasionally, until sugar dissolves.
- Remove from heat and stir in vanilla extract and sea salt.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Pour into an ice cream maker and churn per the manufacturer’s instructions (about 20–30 minutes).
- If using add-ins, fold them in during the last 5 minutes of churning.
- Transfer to an airtight container and freeze for 2 hours for a firmer texture, or enjoy immediately for a softer serve.
Notes
Use only full-fat coconut milk for best texture. Chill the base thoroughly before churning to ensure creaminess. Avoid low-fat coconut milk, as it creates an icy texture.
