This vegan gelato with coconut sugar is a creamy, naturally sweetened dessert that’s perfect for health-conscious sweet tooths. Made with full-fat coconut milk and coconut sugar, it offers a subtle caramel flavor and indulgent texture all without dairy.


Ingredients

  • 2 cans (14 oz each) of full-fat coconut milk
  • 3/4 cup coconut sugar
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon sea salt
  • Optional: 1/2 cup chopped dark chocolate (dairy-free)
  • Optional: 1/2 cup roasted nuts (almonds, hazelnuts, or pecans)
  • Optional: 1/4 cup shredded coconut

Instructions

  1. Shake the coconut milk cans to combine the cream and liquid.
  2. In a saucepan, pour in the coconut milk and add the coconut sugar.
  3. Heat over medium, stirring occasionally, until sugar dissolves.
  4. Remove from heat and stir in vanilla extract and sea salt.
  5. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  6. Pour into an ice cream maker and churn per the manufacturer’s instructions (about 20–30 minutes).
  7. If using add-ins, fold them in during the last 5 minutes of churning.
  8. Transfer to an airtight container and freeze for 2 hours for a firmer texture, or enjoy immediately for a softer serve.

Notes

Use only full-fat coconut milk for best texture. Chill the base thoroughly before churning to ensure creaminess. Avoid low-fat coconut milk, as it creates an icy texture.
