Ingredients

  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 ½ cups full-fat coconut milk
  • 12 ounces vegan dark chocolate, chopped
  • Optional: 2 tablespoons espresso powder
  • Optional: 1 teaspoon cinnamon
  • Optional: Fresh berries for topping
  • Optional: Shredded coconut for garnish

Instructions

  1. In a bowl, mix almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, and salt until dough forms.
  2. Press into a tart pan evenly and refrigerate for 30 minutes.
  3. Heat coconut milk in a saucepan over medium heat until it simmers (do not boil).
  4. Remove from heat, add chopped dark chocolate, and let sit to melt. Stir until smooth.
  5. Pour the filling into the crust and smooth the top.
  6. Refrigerate for at least 2 hours until set.
  7. Top with fresh berries or shredded coconut before serving, if desired.

Notes

Use simmering (not boiling) coconut milk to ensure smooth chocolate. A tart pan with removable bottom makes serving easier. Chill thoroughly for clean slices.
