- 1 ½ cups almond flour
- ¼ cup cocoa powder
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 ½ cups full-fat coconut milk
- 12 ounces vegan dark chocolate, chopped
- Optional: 2 tablespoons espresso powder
- Optional: 1 teaspoon cinnamon
- Optional: Fresh berries for topping
- Optional: Shredded coconut for garnish
Instructions
- In a bowl, mix almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, and salt until dough forms.
- Press into a tart pan evenly and refrigerate for 30 minutes.
- Heat coconut milk in a saucepan over medium heat until it simmers (do not boil).
- Remove from heat, add chopped dark chocolate, and let sit to melt. Stir until smooth.
- Pour the filling into the crust and smooth the top.
- Refrigerate for at least 2 hours until set.
- Top with fresh berries or shredded coconut before serving, if desired.
Notes
Use simmering (not boiling) coconut milk to ensure smooth chocolate. A tart pan with removable bottom makes serving easier. Chill thoroughly for clean slices.
