A hearty, flavor-packed one-pot vegan dirty rice recipe inspired by classic Cajun and Creole cuisine. This plant-based version is bold, satisfying, and perfect for weeknight dinners or meal prep.

- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced

- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 6 ounces vegan sausage, crumbled
- 1/2 cup chopped parsley
- 1/2 cup chopped green onions
- Optional: 1/2 cup canned black beans, rinsed and drained
- Optional: 1/2 cup corn kernels
- Optional: 1 tablespoon soy sauce
- Optional: 1 tablespoon nutritional yeast
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- Prepare all vegetables by dicing the onion, bell pepper, and celery, and mincing the garlic.
- If using optional add-ins like black beans or corn, rinse and drain them now.
- Heat the olive oil in a large pot over medium heat.
- Add diced onion, bell pepper, and celery. Sauté for about 5 minutes until softened.
- Stir in garlic, smoked paprika, thyme, cayenne, black pepper, and salt. Cook for 1-2 minutes until fragrant.
- Add crumbled vegan sausage and cook until browned, about 4-5 minutes.
- Stir in rinsed rice and mix with vegetables and sausage.
- Pour in vegetable broth, bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff with a fork and stir in chopped parsley and green onions.
- If using, mix in optional black beans, corn, soy sauce, or nutritional yeast for added flavor.
Notes
Use fresh herbs for best flavor. Adjust cayenne to control spice level. Avoid stirring while rice simmers to prevent gumminess.
