  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crumbled vegan feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Optional: 1 teaspoon smoked paprika
  • Optional: 1 tablespoon nutritional yeast
  • Optional: 1/2 teaspoon chili flakes

Instructions

  1. Preheat oven to 425°F (220°C) or set air fryer to 400°F (200°C).
  2. Wash, peel, and cut potatoes into even strips.
  3. Soak potato strips in cold water for at least 30 minutes, then drain and pat dry.
  4. In a large bowl, toss fries with olive oil, garlic powder, onion powder, salt, and pepper.
  5. Arrange fries in a single layer on a parchment-lined baking sheet or air fryer basket.
  6. Bake for 30-35 minutes or air fry for 20-25 minutes, shaking halfway through.
  7. Once cooked, top with vegan feta while fries are still hot.
  8. Garnish with chopped parsley and any optional add-ins.
  9. Serve immediately and enjoy!

Notes

Cut fries evenly and don’t overcrowd the pan for the best crisp. For oil-free, use high heat baking without oil.
