  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces
  • 1 cup spinach, chopped
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste
  • Optional: 1/2 cup vegan ricotta cheese
  • Optional: 1/2 cup plant-based sausage, crumbled
  • Optional: 1/4 cup fresh basil, for garnish
  • Optional: Lemon zest, for added freshness

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add garlic, bell pepper, carrot, mushrooms, and zucchini; cook 5–7 minutes until softened.
  4. Stir in crushed tomatoes, vegetable broth, tomato paste, oregano, basil, and red pepper flakes.
  5. Bring to a simmer and add broken lasagna noodles.
  6. Simmer for 15–20 minutes, until noodles are al dente.
  7. Stir in spinach and nutritional yeast; cook 2–3 minutes until wilted.
  8. Season with salt and pepper to taste.
  9. Optional: Stir in vegan ricotta or plant-based sausage for extra flavor.
  10. Serve hot, garnished with fresh basil and lemon zest if desired.

Notes

For richer flavor, use high-quality crushed tomatoes. Avoid overcooking the noodles. To make it gluten-free, use gluten-free lasagna noodles. Store leftovers in the fridge for up to 4 days or freeze in portions.
