- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 carrot, sliced
- 2 cups mushrooms, sliced
- 1 zucchini, chopped
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 8 lasagna noodles, broken into pieces
- 1 cup spinach, chopped
- 1/4 cup nutritional yeast
- Salt and pepper to taste
- Optional: 1/2 cup vegan ricotta cheese
- Optional: 1/2 cup plant-based sausage, crumbled
- Optional: 1/4 cup fresh basil, for garnish
- Optional: Lemon zest, for added freshness
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent, about 5 minutes.
- Add garlic, bell pepper, carrot, mushrooms, and zucchini; cook 5–7 minutes until softened.
- Stir in crushed tomatoes, vegetable broth, tomato paste, oregano, basil, and red pepper flakes.
- Bring to a simmer and add broken lasagna noodles.
- Simmer for 15–20 minutes, until noodles are al dente.
- Stir in spinach and nutritional yeast; cook 2–3 minutes until wilted.
- Season with salt and pepper to taste.
- Optional: Stir in vegan ricotta or plant-based sausage for extra flavor.
- Serve hot, garnished with fresh basil and lemon zest if desired.
Notes
For richer flavor, use high-quality crushed tomatoes. Avoid overcooking the noodles. To make it gluten-free, use gluten-free lasagna noodles. Store leftovers in the fridge for up to 4 days or freeze in portions.
