Instructions
- Peel and thinly slice the onions evenly for proper caramelization.
- Mince the garlic cloves and set aside.
- Preheat oven to 350°F (175°C) for the croutons.
- In a large pot, heat olive oil over medium heat.
- Add sliced onions and cook slowly, stirring often, for 25-30 minutes until golden and caramelized.
- Add minced garlic and cook for 2 more minutes.
- Pour in vegetable broth, balsamic vinegar, and thyme; bring to a simmer.
- Season with salt and pepper; simmer for 20 minutes more.
- Meanwhile, prepare croutons: slice baguette, drizzle with olive oil, season with salt, and bake for 10-15 minutes until crispy.
- Serve soup hot with croutons and a sprinkle of vegan cheese, if desired.
Notes
For optimal flavor, take your time caramelizing the onions over medium heat. Use a heavy-bottomed pot to prevent burning. Taste and adjust salt carefully, especially if using salted broth.
