A delicious plant-based twist on a classic comfort food, these vegan patty melts are packed with flavor, healthy ingredients, and satisfying textures.

- 2 cups of cooked lentils
- 1 cup of breadcrumbs
- 1/2 cup of finely chopped onions
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 1 tablespoon of olive oil
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
- 4 slices of vegan cheese
- 8 slices of whole-grain bread
- Vegan butter for grilling
- Optional: 1/2 cup of sautéed mushrooms
- Optional: 1/4 cup of chopped bell peppers
- Optional: 1 tablespoon of nutritional yeast
- Optional: 1 tablespoon of Dijon mustard
Instructions
- In a large bowl, combine the cooked lentils, breadcrumbs, chopped onions, minced garlic, soy sauce, olive oil, smoked paprika, cumin, salt, and pepper. Mix thoroughly until the ingredients are well incorporated.
- Divide the mixture into four equal parts and shape each into a patty. Ensure they are compact and even for better cooking.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
- In the same skillet, add some vegan butter and sauté the remaining chopped onions over low heat until they are soft and caramelized.
- Place a slice of vegan cheese on each patty. Top with caramelized onions, and add optional add-ins if desired. Sandwich each patty between two slices of whole-grain bread.
- Spread a thin layer of vegan butter on the outside of each sandwich. Return the skillet to medium heat and grill each sandwich for about 3-4 minutes per side, or until the bread is golden brown and the cheese has melted.
Notes
Use fresh lentils if possible. Chill the patties for 30 minutes before cooking for better shape. Don’t overmix the lentil mixture and take your time caramelizing the onions for the best flavor.
