Ingredients

  • 1 cup water, divided
  • 2 tablespoons agar-agar powder
  • 1 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar, for dusting
  • 1/4 cup cornstarch, for dusting
  • Optional: 1-2 drops of natural red food coloring
  • Optional: Crushed peppermint candies
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Line a 9×9 inch baking dish with parchment paper and dust lightly with a mixture of powdered sugar and cornstarch.
  2. In a small saucepan, combine 1/2 cup of water with agar-agar powder and let sit for a few minutes.
  3. Place the saucepan over medium heat and bring to a gentle boil, stirring until agar-agar fully dissolves.
  4. In another large saucepan, mix remaining 1/2 cup of water, granulated sugar, and corn syrup. Heat over medium until sugar dissolves.
  5. Increase heat to medium-high, attach a candy thermometer, and boil without stirring until the mixture reaches 240°F.
  6. Remove from heat and quickly whisk in the agar-agar mixture, peppermint extract, and salt. Add vanilla extract if using.
  7. Pour the mixture into the prepared dish and spread evenly. For a marbled look, add drops of food coloring and swirl with a toothpick.
  8. Let set at room temperature for at least 4 hours or until firm.
  9. Cut into squares using a knife dusted with powdered sugar mix.
  10. Coat all sides of each marshmallow with powdered sugar and cornstarch mixture.

Notes

Use a candy thermometer for accuracy and work swiftly when pouring the mixture to achieve the perfect marshmallow texture. Make sure agar-agar is fully dissolved to avoid grittiness.
